Anosmia and Ruptured ear drum

Of all days to have jury duty selection , of course my ear drum burst over the night . I drove to Providence in pain , and sauntered to the district court , and we were all dismissed after an hour of waiting. You can’t just call in sick to jury duty, everyone would do that , or so I think. So now I have no sense of smell, and half my hearing.

This sequence of events would be a recipe for huge disappointment, except that I’ve been trying to experiment more than just brewing. I reached out to escarpment labs yesterday after watching their video on biotransformation, and now I have my plan for my evolved sideritis recipe .

One thing I was careful to do , was not to flavor the beer with hops , only bitter them. The result gave me a clear flavor profile of the natural phenolic and esters resulting from sideritis . Escarpment labs have focused on a few strains of yeast , and created a hybrid called “Hydra”. Since it’s a Canadian company, they suggested purchasing their yeast from https://www.greatfermentations.com which is based in Indianapolis in the US.

So my third batch will be with Hydra yeast, and dry hopped with cascade Cryo hops . My hope is to convert some of the flavor and aroma to something more sweet and fruity.
